Thai Style Rice Mess

I struggled with what to call this dish because while it started with an inspiration for larb, it ended up being a little too “ricey” and a little too “salady”- then again, not quite salady enough to be a salad. I thought it was more of a dirty rice flavored with Thai ingredients, so rice mess it is. I have a feeling rice mess will become a household signature dish in many varieties.

Method:

On medium heat, saute garlic, ginger, and half the scallions in oil for one minute. Add the ground protein and cook until browned.
Meanwhile, stir together lime juice, fish sauce, soy sauce, and brown sugar until combined into a sauce. Add the mixture to the saute pan once the protein is cooked.
Add the rice and stir until all the sauce is absorbed. Serve the mixture over lettuce and top with carrots, cilantro, and avocado.

Ingredients:

1 tbsp vegetable oil
4 cloves of chopped garlic (because let’s be honest)
1 tsp ginger, fresh or ground
1/2 cup scallions, chopped
1 pound ground chicken, turkey, or vegetarian substitute
Juice of one lime
1 tbsp fish sauce
1 tbsp soy sauce
2 tbsp brown sugar
1 cup cooked rice

To Serve:

Romaine lettuce
Shredded carrot
Cilantro
Avocado
