Pineapple’s acidity and sweetness make for a refreshing substitute when tomatoes aren’t quite in season. Look for pineapples that have evenly sized segments on the outside and still have a touch of green to them.
Deconstructed blackberry crumble swirls together fabulously in this summer treat. Don’t be afraid of the balsamic vinegar, it’s just a bit of acid to brighten the berry flavor. Use lemon juice if you prefer, but I find the balsamic really meshes with the blackberry.
I struggled with what to call this dish because while it started with an inspiration for larb, it ended up being a little too “ricey” and a little too “salady”- then again, not quite salady enough to be a salad. I thought it was more of a dirty rice flavored with Thai ingredients, so rice mess it is. I have a feeling rice mess will become a household signature dish in many varieties.
This one pan dish delivers full comfort and minimum clean up. I love a crispy skinned chicken thigh, and a rich creamy gravy is my favorite way to eat mushrooms.
Tender roast beef, great for sandwiches. Make sure you have an excellent carving knife to get those thin slices.

I wrote this monologue for a locally produced show, and after a lot of encouragement and positive feedback I decided to publish it to my blog. It talks about how sometimes our self love just isn’t there, and that’s okay.
I am overweight and have been since adolescence. I realized a few years ago that my weight gain is driven by food addition. I eat compulsively to try and fill a void in my heart or mind. I eat to fix problems I can’t solve or to forget about the things I can’t control.
While my life didn’t dramatically change that day, it still stands out as a turning point to understanding that dealing with my eating habits was only going to get harder and cause me more problems the longer waited. I remember it being a piece of what started many small steps to finally working towards a healthy, strong body. While today I still have a long way to go, and I understand now that it needs to be a constant vigilance the rest of my life, I can finally say that I feel in control of something I’ve largely ignored my whole life. I am losing weight, controlling my portions, moving my body, and finally feeling good about it instead of smothered by it. So, what’s changed? I wanted to share with you some of the key pieces in shifting my mindset and relationship with food.
